Almond-Mint Pesto

  • 3 cups loosely packed mint leaves
  • 1/2 cup blanched almonds (roasted would be fine too)
  • 2 garlic cloves
  • ¼ c olive oil
  • Salt and pepper

Combine all dry ingredients in a food processor. Turn on the food processor and drizzle in the olive oil through the pour spout until the pesto is the desired consistency.
