Carrot Zinger

  • 1 lb carrots
  • 2 onions
  • 1/2 head garlic
  • 1/2 c miso paste
  • 1/2 finger fresh ginger
  • vegetable broth/boullion
  • salt
  • sesame oil
  • scallions for garnish

Sautee onions, garlic and ginger until onions turn brown. Add broth and carrots. Simmer until carrots are tender. Stir in miso and puree. Serve with scallions and drizzle of sesame oil on top.

Option: replace cauliflower for carrots and add tsp of yogurt for a smoother twist.
