Cashew “Cheese”

  • 1 c soaked cashews (soak raw cashews in water overnight)
  • juice of 1 lemon
  • tbs lemon zest
  • 4 cloves garlic
  • 1/4 c dried oats
  • sea salt

Options for cheese “flavors”

  • smoked sea salt
  • herbs
  • dried fruit
  • flax seed

To make cashew cheese base, add soaked cashews, lemon, lemon zest, garlic oats and salt into food processor and puree until smooth. Wrap puree in cheesecloth and drain until firm. Save the drainage to use as broth. Mix “flavor” options into cheese if desired.
