Corn Chesapeake

  • 4 ears corn, boiled and cut off the cob
  • 1 cup cherry tomatoes
  • 1 cup tightly packed fresh basil
  • 5 healthy shakes of seasoned salt (like Old Bay)
  • 2 tablespoons good olive oil

Roast the cherry tomatoes in a 450 degree oven until slightly wrinkled and fragrant. About 20 minutes. Combine all ingredients, including cherry tomatoes, in a bowl.
