For the People and Planet Green Sauce

  • 1 lb spinach
  • 1 c walnuts (or cashews)
  • 1 avocado (you can replace with additional cashews/walnuts)
  • 1 tbs tahini
  • 4 cloves garlic
  • juice of 1 lemon
  • sea salt
  • pepper

Puree all ingredients. Eat over rice with curd, over roasted veggies (beets, turnips, carrots, etc), or as a dip. So much green!
