Green Ginger Soup

  • 1-2 tbsp olive oil
  • 4 cloves garlic
  • 3-inch piece of fresh ginger
  • 1 ½ tbsp turmeric
  • ½ tsp chili powder
  • 2 tsp cumin
  • 2 tsp coriander
  • 3 cups vegetable broth
  • One bunch chard
  • One bunch spinach

Heat olive oil in skillet. When fragrant and shimmering, add garlic, ginger and spices. Stir and roast until very fragrant. Add vegetable broth and bring to a boil. Add greens and remove from heat. Cover. Blend when cooled.
