Herby Bean Spread

The Anti-Hummus.

  • 2 cups cooked beans (cannellinis, pintos, black, kidney… whatever you have on hand)
  • 2 cloves garlic
  • 1-inch piece of fresh ginger (or dried ginger powder)
  • Lemon juice from ½ lemon
  • Salt
  • Water and olive oil to thin
  • About ¾ cup fresh herbs, chopped. Tarragon, basil, sage, rosemary, parsley, oregano – whatever you have.

Combine all dry ingredients and food processor and pulse to combine. Drizzle in olive oil until desired consistency is reached.
