March-September India Summer Salad

  • 2 or 3 handfuls of mixed dried beans (pinto, black, white, chickpeas, small, big)
  • 2 diced summer tomatoes
  • 3 diced small cucumbers
  • 1/2 red onion
  • 2 c plain yogurt OR 2 tbs of apple cider vinegar
  • juice of fresh lemon
  • mint
  • turmeric
  • salt
  • pepper
  • sesame seeds
  • cilantro – chopped
  • chilis
  • cinnamon
  • fennel

soak beans overnight and boil until soft and mushy – evaporate all remaining water into bean mush. Mix with remaining ingredients and eat when feeling overheated. Or everyday from March until October in India.
