This would be just as good with any other kind of pesto or herb/oil concoction. Think chimichuri!
- 1 head cauliflower
Wash and dry the head of cauliflower, and cut it into 6-8 pieces. Keep the stem intact! Brush with a little olive oil and put in a baking pan or on a baking sheet. Roast in 450 degree oven.
When cauliflower is deep brown on the top and tender, about 25 minutes, flip to bake on the other side. Remove from oven after about 10 or 15 more minutes.
Drizzle with Almond-Mint Pesto and eat immediately.
