Tarini’s Indian Bean Balls with Spicy Green Chutney

For balls:

  • equal parts leftover beans (black, pinto, channa… doesn’t matter)
  • equal parts potatoes
  • salt
  • mustard oil
  • mustard seed
  • garlic

For Sauce:

  • water
  • 1bunch cilantro
  • 4 cloves garlic
  • chili – spicy!
  • onion

Mush potatoes and beans together with your fingers. Form into patties. Braise mustard seeds and garlic in mustard oil and add patties. Cook til crisp on outside. Puree sauce ingredients in food processor and add water for soup-like consistency.

Eat bean balls with fingers – mush into green sauce and serve with plain yogurt (curd) to cool things down.
